Cominciare la mattina presto a lavorare il lievito madre che ho rigenerato ieri sera, primo impasto, pieghe e secondo impasto. Stesura in teglia, altra lievitazione, pomodoro e prima infornata, condimenti ed infornata finale:
-Carciofi freschi e lardo di Arnaud
-Mozzarella di bufala ed origano
-Verdure miste e lardo di Arnaud
-Mozzarella e scamorza affumicata
